Avocado Hollandaise

Ingredients
•2 spring onions
•Juice of 1/2 lemon
•1 tsp red or white wine vinegar
•Tarragon or basil
•1 really ripe avocado
•1 large egg yolk
•1/4 cup of water
Roughly chop the green parts and place in a small pan on a high heat with the lemon juice, 1 teaspoon of red wine vinegar, a pinch of sea salt and black pepper and 1/4 cup of water and bring to the boil. While it comes to a boil place the tarragon leaves, the avocado and egg yolk into a blender. Pour in the hot spring onion mixture, then blend until silky smooth and season with salt and pepper.
