Homemade Chicken Broth

Ingredients
1 Yellow Onion unpeeled quartered
1 head of garlic unpeeled cut in half to expose all the garlic
2 stocks of celery cut into large chunks
2 carrots unpeeled cut into large chunks
1 Chicken carcass and innards
2 bay leaves
1tbsp of black peppercorns
1tbsp of coriander seeds
Salt and Pepper
3 1/2 quarts water
Directions
Step 1

Season the carcass and innards thoroughly with salt and pepper and place in a 6qt enameled Dutch oven along with everything else cover with water season with salt and pepper.
Step 2

Bring to a boil, skim well and lower to a simmer cover and let go for about an hour.
Step 3

Turn off the heat and let cool, strain and store in containers. Enjoy!
